Well spoilers but at the end of Resident Evil 7 Zoey was still infected but she was left behind at the baker estate to eventually be taken by the E-Cells virus or the mold and went into a state of paralysis in crystallized form

There is a DLC named End of Zoe where you play as the older brother of Jack Baker, who saves her. Later on she is mentioned in notes of RE Village. She became a reporter and pursued the truth about the experiments they were exposed, something like that.
