Sheik was always referred to as a guy in Ocarina of Time, and looked for all intents and purposes like a man there. IIRC the original plan was to have Zelda do a de facto rule 63 and turn into a (presumably cis) man physically, but that was considered too risque. Sheik was referred to with female pronouns in Melee, when Ocarina of Time was still fresh in gamers' heads, and then became more feminine in Brawl onward, and even a little girlier in the 3DS remake.
I actually prefer female Sheik, but I agree the skin bleaching we could've done without.

^ smash games refer to sheik with both pronouns the only one where it was exclusively female was brawl.
