I'm not sure if it's the lighting or what but Link's body does NOT match his head. It looks a little weird, same for Zelda.

It's what happens when you stick a head of model A to the body of pre existing model B. Not sure about Link's but Zelda's I'm pretty sure is a (if not the) curvy Elizabeth because their original bodies aren't nude nor as much able to be posed properly.

Oh..I see. I wonder if anyone has ever thought of just making an original animation with these characters. So that the bodies could match. Instead of just sticking heads on other bodies. I don't know how animation works in this kind of thing so I'm just wondering.

Trust me, there's no lack of desire to make animations like this. The "accuracy" -for simplicity's sake- you're talking about requires extraordinary effort that animators either don't have the skills (modeling, rigging, etc.) to do or can't afford to invest the time necessary to do it properly.
