But that is what it is, impossible beef, copying the texture flavor and consistency of beef. Wouldnt make any sense to call it something else as that would only confuse customers.

Simple. Call it what it's made of. Beef mince, beef pies, beef steaks, etc. are named that way because they are made of beef. Impossible beef is not made of beef so calling it beef just because it superficially resembles beef is false advertising.

i remember my local supermarket were selling these fucking vegan bug larvae burgers and called them beef

This one is always silly to me because a lot of people are vegan or vegetarian for ethical reasons or because meat grosses them out. If they're not gonna eat a dead animal, they're not gonna eat tofu dressed up like a dead animal. Just sell them plant burgers and hype up how tasty or nutritous the plants are.
